We select our products and producers based on four criteria: respect for the seasons, maximum use of heirloom seeds, impeccable quality, and environmental awareness to combat the loss of biodiversity.
The quality of a dish always begins with the quality of its ingredients. That is why we have chosen to carefully select our products and producers based on four non-negotiable criteria:
- respect for the seasons, which guarantees that products are at their peak of ripeness and nutritional value;
- priority given to heirloom seeds, which are more diverse and better adapted to their local environments than industrial seeds;
- impeccable quality, ensuring a delightful taste and freshness;
- and finally, a genuine commitment to environmental stewardship, to take concrete action against the collapse of biodiversity that threatens our agricultural ecosystems.
This selection process, carried out in direct collaboration with our partner producers, is at the heart of our culinary identity.
