We use only "green" electricity and gas, and we reduce our consumption by using energy-efficient kitchen appliances.
Our commitment to the environment extends to the day-to-day operations of our kitchen. We have chosen to use electricity and gas from renewable sources—so-called “green” energy—for all of our operations. At the same time, we are investing in energy-efficient kitchen equipment to structurally reduce our energy needs, rather than simply offsetting our impact. We consider this approach to energy efficiency to be essential to sustainable dining.
